Balsamic roasted Brussels Sprouts

This is just an easy but delicious side dish that I made one night while I was eating some leftovers. I always think of the cartoons when I was a kid and how poor brussels sprouts were demonized. I used to avoid them even though I’d never tried them, and it turns out they are so delicious in so many ways! This version also adds pomegranate to incorporate another seasonal food. Enjoy!

Balsamic roasted Brussels Sprouts( ~3 servings)
Total time: 30-35 minutes 


1 package brussels sprouts (about a lb)
1.5 tablespoons olive oil
2 cloves minced garlic
1.5 tablespoons balsamic vinegar
salt and pepper to taste



  1. Preheat oven to 450 degrees F
  2. Put aluminum foil on a baking sheet and spread the brussels sprouts on it
  3. Mix together the olive oil, garlic, balsamic vinegar, and salt/pepper. Pour over the brussels sprouts and make sure they are covered
  4. Roast for 20-25 minutes
  5. Once you pull them out, sprinkle with salt and drizzle pomegranate over it. My favorites are the slightly blackened pieces 🙂
